Healing Eats Cookbook by Kate Jay: Review

Kate Jay of Healing Family Eats has been one of my favorite bloggers long before I started this blog. She too, lives in Canada and for some reason whenever a blogger is from Canada I feel a strong connection to them. I am sure you guys can relate when you find a blogger from your country you just feel like they “get you.”

I was lucky enough to receive a copy of Kate’s new ebook Healing Eats to review for you guys and because she is super kind and generous she agreed to give one copy away to one of my readers! Stay tuned to the end of the post for  the giveaway details (giveaway now closed)!

First off I just want to say that I really love how clean and crisp the photos in this ebook are. Secondly the font is just so whimsical that it puts you in a good mood. Looks aside, this book is full of beautiful recipes that for the most part you could whip up on a weeknight and your family/guests will think you spent hours in the kitchen prepping.

The first section gives you some background into Kate’s story along with her family’s story which I think many people will be able to relate to. A hot topic she discusses in regards to a healing diet like the autoimmune protocol is whether to “Take the Plunge or Take it Slowly?” I get asked this question all the time so I was happy to see that she included this in her book. Kate also discusses the healing foods she included in this book and the equipment she recommends you have in your kitchen.

The second section is of course the recipes! Kate offers a variety of recipes from drinks to soups, to salads, to sushi rolls, to main dishes and treats! I love that all of her recipes are nutrient dense (yes, even the treats) and that the majority of the ingredients are easy to locate locally. Oh and did I mention all 25 recipes are AIP compliant!

The recipe that stood out the most to me initially was the Chicken Kale Bake so I had to try that recipe first. Let me tell you, this tastes just like a creamy chicken casserole made with a whole lot of dairy (except of course there isn’t any dairy to be found). It is creamy and comforting and yet really good for you.

The second recipe I knew I needed to try was the Blackberry & Lavender Spritzer. This my friends is going to be my new go to summer drink this year. I have never had lavender in a drink before but the combination with the ginger and the blackberries is so tasty! So good in fact, that I started imagining I was sipping this spritzer at a cafe in the south of France!

The third recipe I made was the Sweet Potato- Ginger Coconut Bliss Balls. These delectable treats are so elegant looking that they could be sold at a store like Purdy’s Chocolates. The inside is similar to that of a Power Ball (if you have tried those before) and the outside is full of chocolately goodness.
