AIP No Bake Cookies

So if you have been reading my posts for awhile then you know that following the autoimmune protocol is a lot of work. Work that is well worth it when it drastically improves your health and well being. That being said, we are all busy these days and sometimes we just want convenience.

I have talked before about how I wish I could open my pantry and there would magically be a box of cookies waiting for me. Well at this current time there are not any cookies waiting for me in my pantry that are AIP friendly. Although I do have hope that foods like these will be available very soon!

In the mean time, here is a recipe for some No Bake Cookies that take less than 10 minutes to make. My mom use to make a recipe similar to this when I was growing up. It had cocoa, butter, and rolled oats in the recipe and I have very fond memories of these cookies. So I thought, why not recreate this recipe? So here they are in all their glory, minus the oats, cocoa, and butter– hehe. But I promise they taste just as good!

Do yourself a favour and whip up a batch of these cookies so you have them for when that midweek sweet craving kicks in!

AIP No Bake Cookies

No Bake Carob Cookies
Course Dessert
Prep Time 10 minutes
Total Time 10 minutes
Servings 12 cookies

Ingredients

  • 1/3 cup coconut oil, melted virgin
  • 3 tbsp coconut butter, melted
  • 3 tbsp collagen hydrolysate Great Lakes brand
  • 1/4 cup honey, softened unpasteurized
  • 1 tsp alcohol free vanilla omit if strict AIP
  • 1/4 cup roasted carob powder
  • 1.5 cups unsweetened shredded coconut

Instructions

  1. Melt coconut oil, coconut butter and honey if needed. Add all ingredients into a medium sized bowl and stir together.
  2. Add collagen, vanilla, and carob powder to the bowl. Stir until fully mixed.
  3. Add shredded coconut to the bowl. Stir until all of the coconut is covered with the carob mixture.
  4. Line a baking sheet with parchment paper. Scoop heaping tablespoons and roll into balls. Place on baking sheet and put in the freezer for 20-30 minutes to set.
  5. Store in a sealed container in the fridge for up to 1 week or store in the freezer.

    Can you substitute the honey out with another sweetener like monk fruit or stevia? Trying to do keto as well as AIP.

      I haven’t tried it but I think it would work. You may just need to add a little more coconut oil possibly.
