Beef Chow Mein & New 30 Minute Meals E book!

I am so excited to share today’s post with you! First of all I get to share with you a new recipe- an AIP Beef Chow Mein that tastes just like take out! Secondly I can finally share with you the new AIP Community E book- 30 Minute Meals for the Paleo AIP.

This E book is pretty much your new best friend, especially if you are new to the AIP, work full-time, have a busy family life or really just need to save some time in the kitchen. This book really is for everyone! Every single recipe in this book (there are 120 meals and over 300 recipes) can be made in 30 minutes or less from start to finish (yes that includes prep and cook time). There are 41 contributors, including, The Paleo Mom, Gutsy By Nature, Meatified, Mickey Trescott, Eileen Laird and many more! Each recipe is for 4 people so you can easily make these for your family or adjust it for smaller or larger crowds. All of the recipes use basic real food ingredients that you probably already have on hand. It is in PDF format and is easy to download and print out if you wish! All of the recipes are 100% AIP compliant but they are also great recipes for people with food allergies/intolerance’s or just someone who wants to start eating healthier without spending a lot of time in the kitchen.

I really wish this E book existed when I started the AIP. I was switching from a standard diet (meaning I spent very little time in the kitchen) to the AIP which involves a lot of at home cooking and time spent in the kitchen. This made the transition very difficult for me and this E book would have been a life saver.

Now onto the chow mein recipe! This is one of my favorite weeknight meals. Every week I buy a bag of broccoli slaw or some sort of slaw and then I use whatever protein I have on hand- beef, chicken or shrimp! Toss it all together with a few ingredients for the sauce and you have a delicious meal that tastes like takeout and is ready in less than 30 minutes!

Beef Chow Mein (AIP, Paleo)

This one pot beef chow mein recipe is the perfect weeknight meal when you are craving take out! Swap out the beef for chicken or the broccoli slaw for your favorite slaw or shredded cabbage to change it up! ***To complete the recipe in 20 minutes- buy your broccoli slaw pre-shredded and your stewing beef already chopped.

Servings 4 servings

Ingredients

  • 1 medium white or yellow onion
  • 2-3 cloves garlic
  • 1 bag shredded broccoli slaw
  • 1 pound boneless stewing beef
  • 2 Tbsp coconut oil
  • 1 tsp ground ginger
  • 1/2 tsp salt
  • 1 large navel orange juice squeezed
  • 1/4 cup coconut aminos
  • 1/2 tsp Red Boat fish sauce optional

Instructions

  1. Peel and chop the onion into bite sized pieces. Peel and mince the garlic and wash the broccoli slaw. Set aside.
  2. Chop the stewing beef into bite sized pieces and trim any excess fat. Heat the coconut oil in the large frying pan over medium high heat.
  3. Sauté the onions and garlic for 2-3 minutes and then add in the chopped stewing beef, ginger, and salt. Cook the beef for 6-7 minutes until almost cooked through, stirring often.
  4. While the beef is cooking, cut the orange in half and use the citrus juicer to juice the orange.
  5. Stir in the orange juice, coconut aminos and fish sauce. Turn the heat to low and simmer for 4-5 minutes.
  6. Add in the shredded slaw and stir to coat with the sauce. Cook for an additional 3-4 minutes.
  7. Remove from the heat and serve immediately. Store in the refrigerator in a glass dish for 3-4 days.

    Hi Meagen, your recipe sounds delicious but you need to fix a few things. broccoli is spelled wrong in your ingredients. Also under instructions number 1 needs some clarification.

      2 cups of shredded broccoli stalks, 1 cup shredded carrots and 1 cup shredded red cabbage.
