Guest Post: Coconut Mojito Bites (AIP)

I am so excited to bring you this recipe from my good friend Bethany, from The Emancipated Epicure. We quickly became Instagram friends through our love of food and the autoimmune protocol a few months ago. I was so excited to learn that we only live a short distance from each other! Three of my favourite flavours are lime, coconut, & mint. I use them over and over in various recipes, both savoury & sweet. So, when Meagen invited me to do a guest post, I knew it would feature at least one of these flavours! Apparently I couldn’t choose one, as all three come together irresistibly in this treat.

I used to really enjoy a Mojito (a rum cocktail with mint & lime) in my pre-AIP days. Lime and mint are just my jam. These bites have the essence of a Mojito but I took it up a notch with the addition of sweet, creamy coconut. They are so good you don’t miss the alcohol!
While we know even healthy treats should be eaten in moderation while following the AIP, these are nothing to feel guilty about! They do not have a lot of sweetener (thanks in part to the addition of sweet potato!) and have the goodness of fresh lime juice, shredded coconut, and healthy fats from the coconut oil & butter. They make a great little dessert, or can be used as fat bombs for a quick pick-me-up during the day!

Guest Post: Coconut Mojito Bites (AIP)

Ingredients

  • 3/4 cup unsweetened shredded coconut
  • 1/2 cup coconut butter
  • 1/4 cup white sweet potato puree
  • 3 tbsp coconut oil, melted
  • 2 tbsp + 1 tsp fresh lime juice
  • Zest of 2 limes
  • 1 tbsp + 2 tsp maple syrup or honey
  • 13 drops peppermint oil
  • Pinch sea salt

Instructions

  1. Put the shredded coconut in a small bowl and set aside. Place the remaining ingredients in a mixing bowl & mix (with handheld or stand mixer) until well combined and whipped looking. (The colour will have lightened.)
  2. Place the mixture in the fridge for 15 minutes. Remove chilled mixture and form into balls, each 2 tsp.
  3. Roll each ball in the shredded coconut, then place in a glass container. Refrigerate the Bites until firm. Serve cool; store in the refrigerator or freezer.

    Where does one find white sweet potatoes? I didnt even know there was such a thing and have never seen them. Thank you

      Hi Jennifer,

      I am in Canada and I can get them at superstore or my local IGA or save on foods. I have also seen them at places like sprouts and whole foods in the states. There is a jersey variety and a hanna variety that I get here. Hope that helps!
