Tropical Winter Smoothie (AIP, Paleo)

So it is still Winter…I mean spring is coming in some parts of the world but it’s not here yet where I am. Not even a little bit. If I am being realistic I know that we can get snow up until the end of April so I still have two months or so until I am free of Winter.

I know that I can get into a rut or a downer mood around this time of year. So I thought I would try to lift that mood and create a new smoothie recipe that feels a little like Spring/Summer without being too Tropical. That’s why I call this my Tropical Winter Smoothie. So you can enjoy this smoothie in the Winter or Spring and feel like Summer is only a few weeks away.

Smoothies tend to be a personal preference for most people so feel free to swap out the spinach and frozen fruit with your favorites.

I don’t have any advice other than hang in there, sip on this smoothie and Winter will be over before we know it!

Tropical Winter Smoothie

A tropical smoothie to chase those Winter blues away!

Prep Time 5 minutes
Total Time 5 minutes
Servings 1 servings

Ingredients

  • 5 ounces coconut mik 150 mL
  • 1 cup filtered water or coconut water
  • 1 Tbsp coconut butter (manna)
  • 1 Tbsp tigernut flour
  • 1 tsp honey
  • 1.5 tsp cinnamon
  • 1 cup baby spinach
  • 1/4 cup frozen raspberries
  • 2 Tbsp frozen cranberries
  • 1/4 cup chopped frozen pineapple
  • 1 cup chopped frozen bananas/strawberries
  • 3 large ice cubes

Instructions

  1. Put all of the ingredients into a high powered blender (in the order listed).
  2. Blend on high until the mixture is smooth.
  3. Pour into one large glass or 2 medium glasses. Serve immediately.
