Ingredients

SALAD

  • 1 large head of cauliflower cut into florets
  • 3 apples of your choice cored and sliced
  • ¼ cup unsulphured raisins
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh mint or herbs of your choice
  • ¼ cup chopped toasted tigernuts or STAGE 2 Reintro option: walnuts

DRESSING

  • Juice of ½ lemon
  • cup additive-free coconut milk yogurt or coconut cream + 1 Tbsp apple cider vinegar
  • 1 Tbsp extra-virgin olive oil
  • Sea salt to taste
  • STAGE 1 Reintro option: 1 tsp ground dry mustard seeds

Instructions

  1. Steam the cauliflower florets for 5 minutes or until tender-crisp. Drain well, then chill in the fridge for 2 hours or until cold.
  2. In a large bowl, combine prepared cauliflower, apples, raisins, herbs, and tigernuts. Set aside.
  3. In a small bowl, whisk together all DRESSING ingredients.
  4. Pour the dressing over the cauliflower apple mixture and toss gently to combine.
  5. Serve the cauliflower apple salad chilled or at room temperature. Enjoy!

Recipe Notes

  • If you prefer a sweeter salad, you can add a drizzle of honey or maple syrup to the dressing.
  • Like extra dressing? Double the batch of dressing and serve the extra on the side!
