cooked shredded chicken

Juice of 1 lemon

additive-free coconut milk

bunch fresh parsley
chopped

Lemon slices and fresh chopped dill
for serving, optional

Heat olive oil in a large pot over medium-high heat. When hot, add carrots, celery, and green onions, sauté briefly, and then stir in the garlic.

Increase heat to high and add the broth and bay leaf. Once the liquid has come to a boil, add the rice and salt.

Reduce heat to medium-low and simmer for 20 minutes or until the rice is tender.

Stir in the cooked chicken and lemon juice and cook for 1 minute or until chicken is heated through. Remove from heat immediately.

Garnish with parsley and optional lemon slices and dill, then enjoy!
