Chicken Bacon Veggie Skillet

A quick weeknight meal that will use up those leftovers. Substitute pork/beef/lamb/bison for the chicken. Use whatever veggies or starches (squash, plantains, sweet potatoes) you have left over.

Servings 2 people

Ingredients

  • 1 or 2 piece(s) chicken breast
  • 3 slices bacon nitrate free
  • 2 tbsp bacon grease left over from cooking the bacon
  • 1 cup spinach
  • 2 cups zucchini and mushrooms
  • 1 cup beets and sweet potatoes

Instructions

  1. Saute the bacon on medium heat until crispy and brown on both sides. Remove and set aside.
  2. Chop the chicken into bite sized pieces. Place in the pan with the bacon grease. Cook until crispy.
  3. Add the rest of the ingredients (veggies/starches) to the pan. Cook for 5 minutes (or until warm). Taste and add salt as needed.
  4. Serve on two plates or store one serving for later. Lay the slices of bacon on top or crumble on top. Sprinkle with your favourite AIP "cheese" for an extra kick.

Recipe Notes

AIP cheese recipe used  is from Zesty Paleo. It's delicious, but this dish also tastes just fine without it!

If you can't find AIP friendly bacon, simply use side pork instead and season with salt.
