Tiger Nut Apple Crisp

An AIP friendly apple crisp with tiger nuts.

Ingredients

  • 4 cups apples, peeled and sliced thin gala, macintosh, honey crisp
  • 1/3 cup coconut milk aroy d brand
  • 2 tsp lemon juice
  • 3 tbsp maple syrup
  • 1 tbsp cinnamon
  • 1 tbsp coconut palm sugar
  • 1 tsp AIP All spice (mace, cinnamon, cloves)
  • 1/4 cup tiger nut flour sifted
  • 1/4 cup coconut flour
  • 4 tbsp chopped tiger nuts
  • 1 tbsp coconut palm sugar
  • 1 pinch salt
  • 1 tbsp cinnamon
  • 3 tbsp coconut oil, melted
  • 2 tbsp raisins garnish
  • 1 tbsp coconut milk garnish

Instructions

  1. Preheat the oven to 375 degrees. Grease an 8x8 baking dish with coconut oil.
  2. Peel and slice the apples. Place in a bowl. Pour in the coconut milk, lemon juice, maple syrup, coconut palm sugar, cinnamon, and All spice. Stir to coat the apples.
  3. Pour the apple mixture into the greased dish. In a separate bowl combine the flours, tiger nuts, palm sugar, cinnamon, salt, and coconut oil. Stir until it is crumbly.
  4. Use your hands to sprinkle the crumbly mixture on top of the apples in the baking dish. Put in the oven and bake for 25-35 minutes or until golden brown.
  5. Remove from the oven and let cool for 10 minutes. Sprinkle raisins over the top and add a tbsp of coconut milk as a garnish if desired. Store left overs in a glass container in the fridge.
