Instructions
Wash and quarter apples. Add to large pot and cover with water.
Wrap cinnamon sticks and AIP allspice in two 6 inch pieces of cheese cloth. Bundle ends together and tie with string. Place wrapped spices in the pot.
On medium high heat, bring pot to a boil. Boil on medium heat for 1 hour. Then turn heat to low and simmer for 2 hours partially covered.
Remove lid and remove from heat. Let cool. Remove spices and discard.
Mash apples and then pour apples into a strainer lined with a cheese cloth. Squeeze juice from apples.
Store apple cider in a glass jar in the fridge for up to two weeks or freeze. Reheat in a small pan on the stove. Serve with an apple slice or a cinnamon stick for garnish.
