AIP and Paleo Hassleback Sweet potatoes flavoured with duck fat and herbs!

Ingredients
4mediumsweet potatoesJapanese or Hannah variety
2tbsplard of choiceduck fat
1tsprosemary
1/2tsporegano
1/2 tsp thyme
1/2tspsea salt
2clovesfresh garlic, minced
Instructions
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or aluminum foil.
Scrub the sweet potato skins thoroughly. Make 1/8-1/4 inch thick slices along the sweet potato about 2/3 of the way through.
Place the sweet potatoes on the lined baking sheet. Brush the tops with a tbsp of lard and sprinkle with salt. Place in the oven and bake for 60-70 minutes or until they are soft.
In a small bowl mix 1 tbsp of lard, minced garlic, thyme, oregano, and rosemary. Stir. Remove sweet potatoes from the oven and brush the mixture on top of the cooked sweet potatoes.
