Shrimp Cauli-Fried Rice
Cauli Fried Rice with shrimp & kale

I used avocado oil

Rice the cauliflower and peel the shrimp.

Heat the pan over medium high heat with a tbsp. of lard.

Mince the garlic and add to the pan. Stir for about a minute until fragrant. Add the shrimp and cook until no longer pink (about 4-5 minutes).

Add the kale to the pan and stir until wilted (1-2 minutes). Add the riced cauliflower along with a tbsp. of oil, salt, and the chicken broth.

Stir until everything is well incorporated and let simmer for 2-3 minutes.

Remove from heat and stir in the lemon juice and fresh parsley. Serve immediately.
Store leftovers in a glass container in the fridge for 2 days.
