Black Forest Cake Cookies

All the flavor of a Black Forest Cake in a Cookie!

Ingredients

  • 1 cup tiger nut flour
  • 1/2 cup arrowroot starch
  • 1/4 cup cassava flour
  • 1/8 tsp sea salt
  • 2 Tbsp Collagen optional
  • 3 Tbsp carob powder, roasted
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 cup avocado oil
  • 1/4 cup maple syrup
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract alcohol free
  • 1/4 cup dried cherries, chopped

Instructions

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

  2. Put all of the dry ingredients (except the dried cherries) into a large bowl and stir.

  3. In a small bowl, combine the liquid ingredients.

  4. Pour the liquid ingredients into the large bowl with the dry ingredients until the dough is formed.

  5. Fold in the dried cherries.

  6. Roll into 10-12 balls and flatten on a cookie sheet to make a cookie shape.

  7. Bake for 10-13 minutes. Cookies should be slightly firm to the touch in the center.

  8. Let cool for 10 minutes on the pan and then move to a cooling rack to cool completely.

  9. Store in the fridge in a glass container for up to 1 week or freeze for up to 3 months.
