AIP Chicken Noodle-less Soup (Paleo, Whole30)

Ingredients

  • 2 tablespoons coconut oil (for coconut-free, use olive oil)
  • 1 medium yellow onion chopped
  • 2 large carrots chopped
  • 2 stalks celery sliced
  • 4 cups chicken bone broth (or more to thin as desired)
  • 2 cups cooked chicken torn into bite-sized pieces
  • 2 cloves garlic minced
  • 2 tsp sea salt or to taste
  • 1 bay leaf
  • minced fresh herbs like parsley and chives for garnish

Instructions

  1. Add coconut oil to a large pot over medium heat. When hot, add the onion, carrots, and celery.
  2. Saute for 10 minutes or until onions are translucent and veggies are golden brown.
  3. Add all remaining ingredients (except the fresh herbs). Increase heat to bring to a low boil, then reduce heat to a simmer and cover.
  4. Cook for 15 minutes or until veggies are tender. Serve in bowls topped with fresh minced herbs.

Recipe Notes
