Add all ingredients to a medium mixing bowl. Stir well to combine, then taste and adjust seasonings if desired.
Divide mixture evenly between 4 mason jars. Cover then refrigerate overnight or for at least 4 hours. N’oatmeal is ready when the mixture has thickened and the raisins are soft.
Top with toasted sliced tigernuts just before serving for an extra crunch!
