Add all ingredients to a medium soup pot over medium high heat. Cover then bring to a low boil.
Remove cover then turn down the heat to medium until it simmers moderately. Cook for 5 minutes or until squash is tender.
Turn off the heat, then carefully use an immersion blender or blend in batches in your high-speed blender until very smooth and velvety.
