AIP Chilled Zucchini Pasta Salad (Paleo, Whole30, Keto)

Ingredients

  • 1 batch AIP Pesto Sauce (recipe in NOTES)
  • 3 medium zucchini
  • Sea salt or Herbamare, to taste
  • ΒΌ cup nutritional yeast (optional)
  • Fresh basil leaves for serving (optional)

Instructions

  1. Make the AIP Pesto Sauce, then set aside.

  2. Trim the ends off the zucchini. Spiralize or grate the zucchini into thin noodles.

  3. Add zucchini noodles to a large mixing bowl. Tear them apart with your hands in a few places to shorten the length of the noodles a bit.

  4. Add AIP Pesto Sauce, salt or Herbamare, and optional nutritional yeast over the top of the noodles. Use tongs to toss gently until noodles are evenly coated.

  5. Chill if desired for 2 hours or overnight. Serve immediately or serve cold.
