Ingredients

  • 2 pounds ground beef
  • 1 large onion, finely minced
  • 1 small carrot, finely minced
  • 4 cloves garlic, finely minced
  • cup tigernut flour
  • 1 tablespoon coconut flour (sub 2 Tbsp cassava flour for coconut-free)
  • 2 tablespoons herbs de Provence
  • 1 teaspoon ginger powder
  • 1 ½ tsp sea salt, or to taste
  • ½ cup AIP ketchup (suggestion in notes) Optional

Instructions

  1. Add beef, onion, carrot, garlic, flours, and dry seasonings to a medium mixing bowl. Gently massage with your hands until well combined, but do not overmix or the loaf will become tough during cooking.

  2. Transfer the mixture to the crock of a slow cooker. Form it into a loaf shape.

  3. Cover and cook on low for 4-6 hours or until the center is cooked through to 165 F.

  4. Optional: Top with ½ cup of AIP ketchup, then cover and cook for 10 more minutes.

  5. Slice and serve with your favorite side dishes like mashed cauliflower and bacon-braised greens!
