Paleo AIP Balsamic Fig Flatbread (Dairy-Free, Grain-Free)

This Paleo AIP Balsamic Fig Flatbread is a classy version of pizza! It’s dairy-free, grain-free, gluten-free, and nightshade-free.

Ingredients

CRUST (or use one the of the flatbread pizza crust recipes in NOTES)

  • 1 bag AiPeazy Tigernut Mix
  • 1 cup cold filtered water
  • 3 Tbsp melted coconut oil (plus more for greasing)

TOPPINGS

  • 2 batches AIP Mozzarella Cheese (see recipe in NOTES)
  • 2 cups fresh figs (or 1 cup dried figs), chopped
  • 1 cup mixed baby greens
  • Balsamic Honey Drizzle, to taste (see recipe below)

BALSAMIC HONEY DRIZZLE

  • ¼ cup raw local honey
  • 2 tablespoons balsamic vinegar
  • 1 dash sea salt

Instructions

  1. Prepare and bake the pizza crusts according to package instructions.

  2. Make the AIP Mozzarella Cheese, then break it into bite-sized chunks.

  3. Top the flatbreads with cheese, figs, and greens.

  4. Drizzle with the Balsamic Honey Drizzle, then slice and enjoy!
