These Paleo AIP Pickled Red Onions are the perfect Autoimmune Protocol condiment for burgers, pizza, salads, and more!
Use a mandolin or a very sharp knife to slice the onion very thinly.
Add onions and garlic clove to the mason jar, then set aside.
To a small pot over medium heat, add vinegar, water, honey, and salt. Stir until honey and salt dissolve (about 1 to 2 minutes).
Cool liquid completely, then pour it over the onions.
Seal the jar, then allow the onions to sit at room temperature overnight to pickle.
Store in the fridge for up to 14 days.
