Paleo AIP "Coffee" Ice Cream (Dairy-Free, Nut-Free, Caffeine-Free)

Ingredients

  • ¾ cup double-brewed Sip Herbals AIP coffee alternative any flavor; follow package directions
  • 2 13.5 oz BPA-free cans full-fat coconut milk
  • cup honey or to taste
  • 1 tsp pure vanilla extract
  • 1 dash finely ground sea salt

Instructions

  1. Whisk together brewed Sip Herbals, coconut milk, honey, vanilla, and salt in a small pot over medium heat until honey is dissolved.
  2. Remove mixture from the heat, then transfer mixture to a wide bowl. Cool to room temperature, then cover and chill in the fridge for at least 6 hours or until completely cold.
  3. Pour mixture into an ice cream maker, then follow the appliance’s instructions to prepare the ice cream.
  4. Ice cream will be soft-serve straight from the ice cream maker.
  5. For harder ice cream, store in an airtight container and chill in the freezer for 6 hours. When ready to serve hardened ice cream, remove the container from the freezer and allow it to rest on the countertop for 15 minutes before scooping.
