Ingredients

  • 2 tbsp lard Pork or duck lard
  • 1 package broccolini
  • 1 tsp sea salt divided
  • 1 tbsp lemon juice fresh squeezed
  • 2 cloves garlic minced

Instructions

  1. Wash and trim broccolini. Cut off any leaves and trim an inch off the ends.
  2. In a sauce pan, bring water to a boil. Add 1/2 tsp of sea salt and blanch the broccolini for 2 minutes. Remove broccolini and put in a bowl of cold water.
  3. Using the same sauce pan, pour the water down the drain. Melt the 2 tbsp of lard over medium heat. Once melted, add in the minced garlic. Cook for 2 minutes.
  4. Add in the lemon juice and stir. Drain the broccolini and add it to the pan with 1/2 tsp of sea salt. Stir to coat. Serve immediately.

Recipe Notes

You want the broccolini to be somewhat firm rather than too tender. Don't blanch them for longer than 2 minutes and add them to cold water to prevent further cooking.
