Heat 8 cups of pork broth over medium heat on the stove. Measure out your 2 cups of pulled pork or 1 pound of cooked ground beef and set aside in a bowl.

Wash and chop cauliflower, broccoli, green onions, and carrots. Wipe your mushrooms down with a wet paper towel, then slice.

Once your broth is warm, add in all your veggies and bring to a boil. Turn down to low, cover, and simmer for 20 minutes or until your veggies are tender. Stir occasionally.

Add in your pulled pork or ground pork, stir and simmer for 5 minutes more. Add in salt and taste. Adjust if needed.

Pour soup into a bowl. Add in 1 tbsp of coconut aminos and sprinkle with additional chopped green onions if desired. Serve right away.
