Ingredients

  • 2 cups sliced tigernuts
  • 2 cups unsweetened dried shredded coconut
  • 2 tsp cinnamon
  • 1/4 cup tigernut flour sifted
  • 1/4 tsp sea salt
  • 1 tsp gelatin
  • 1/2 cup raisins
  • 1/4 cup dried fruit of choice chopped
  • 1/3 cup + 1 Tbsp maple syrup

Instructions

  1. Preheat the oven to 300 degrees and line a baking sheet with parchment paper.
  2. Combine all ingredients in a large bowl until the maple syrup has evenly coated everything.
  3. Spread out onto a baking sheet and press down with fingers to form a thin layer.
  4. Bake for 20-25 minutes.
  5. Cool fully and then snap into 6 pieces. Store in the fridge for up to 1 week.
