AIP Trail Mix Bark

This AIP Trail Mix Bark is addictive – but in a good way!

When I have this prepped up I get excited knowing that there’s a healthy, compliant snack ready and waiting for me in the fridge and I just can’t wait to get to it.

It’s easy peasy to make with just a few ingredients. Toss everything in a mixing bowl, spread on a baking sheet, then put it in the oven to bake to an aromatic golden brown. My favorite kind of cooking: 1, 2, 3!

I love how I can customize it too if I don’t have a certain ingredient on hand. If I am out of raisins I can simply use dried, unsweetened cranberries.

AIP Trail Mix Bark

An AIP Trail Mix Bark recipe for a healthy, easy snack that is simple to make! Paleo Autoimmune Protocol Compliant and gluten free.

Ingredients

  • 2 cups sliced tigernuts
  • 2 cups unsweetened dried shredded coconut
  • 2 tsp cinnamon
  • 1/4 cup tigernut flour sifted
  • 1/4 tsp sea salt
  • 1 tsp gelatin
  • 1/2 cup raisins
  • 1/4 cup dried fruit of choice chopped
  • 1/3 cup + 1 Tbsp maple syrup

Instructions

  1. Preheat the oven to 300 degrees and line a baking sheet with parchment paper.
  2. Combine all ingredients in a large bowl until the maple syrup has evenly coated everything.
  3. Spread out onto a baking sheet and press down with fingers to form a thin layer.
  4. Bake for 20-25 minutes.
  5. Cool fully and then snap into 6 pieces. Store in the fridge for up to 1 week.
