AIP Lovebird Cheerio Granola (Paleo)

Enjoy cereal for breakfast again! This granola makes a crunchy dairy-free yogurt topping and is a quick and simple snack! Paleo Autoimmune Protocol compliant and gluten-free.

Ingredients

  • 2 Cups crushed lovebird cereal (in any flavor)
  • 1 Cup large coconut flakes
  • 1 Cup shredded unsweetened coconut flakes
  • ¾ Cup unsweetened banana chips (crushed)
  • 1 Cup dried unsweetened fruit (e.g. raisins, cherries, cranberries)
  • ½ Cup sliced tigernuts
  • ¼ Cup coconut flour
  • ½ Cup liquid honey
  • ¼ Cup maple syrup
  • 2-3 Tsp tsp of cinnamon
  • 2 Tsp gelatin (optional)
  • Tsp sea salt

Instructions

  1. Preheat the oven to 300 degrees F.

  2. Mix all ingredients together in a large bowl.

  3. Line a large baking sheet (or two) with parchment paper and spread the granola mixture evenly onto the baking sheets.

  4. Bake for 20 minutes. Let cool completely.

  5. Break up into bite sized chunks and store in the refrigerator for up to 1 week.
