Paleo AIP Starbucks Pink Drink Copycat

Ingredients

  • 1 cup hot (but not boiling) filtered water
  • 1 bag hibiscus tea
  • 2 Tbsp honey or maple syrup
  • 2 tsp fresh lemon juice
  • 1 ½ cups coconut cream or homemade tigernut milk (link to recipe in NOTES)
  • 1 pinch sea salt
  • Ice to fill
  • ½ cup fresh strawberries, quartered

Instructions

  1. Pour hot water over the tea bag in a 4-cup Pyrex measuring cup with a spout (or similar heat-safe container). Steep for 10 minutes, then remove the tea bag.

  2. Discard the tea bag, then cool the brewed tea for 10 minutes.

  3. Stir the honey or maple syrup into the tea to dissolve.

  4. Stir in lemon juice, coconut cream, and salt vigorously.

  5. Add ice to nearly fill two tall drinking glasses (leaving 2” of space at the tops), then top with optional strawberries.

  6. Immediately pour the tea mixture over the ice and enjoy!
