Ingredients

  • 2 tablespoons tallow
  • 2 pounds lamb shoulder, cubed
  • 1 onion, chopped
  • 2 carrots, peeled and large-chopped
  • 2 turnips, peeled and large-chopped
  • 2 parsnips, peeled and large-chopped
  • Sea salt, to taste
  • 3 cloves garlic, minced
  • 1 tsp each ground turmeric, ground ginger, and dried parsley
  • 6 cups bone broth
  • ½ cup pumpkin puree
  • 1 bay leaf
  • 1 tablespoon red wine vinegar
  • Fresh herbs for garnish, if desired

Instructions

  1. Add tallow to a large soup pot over medium heat. When hot, add lamb, onion, root vegetables, and salt. Cook for 10 minutes, stirring occasionally, until everything is golden brown.

  2. Stir in the garlic and dry seasonings. Cook for 1 minute. Stir in broth, pumpkin, vinegar, and bay leaf.

  3. Increase heat to bring to a low boil, reduce heat to keep at a very low simmer. Cover and cook for 1 hour or until lamb is very tender.

  4. Remove bay leaf, then taste to adjust seasoning if necessary. Serve in bowls topped with optional fresh herbs and enjoy!
