Paleo AIP Lamb and Root Veggie Stew is a gluten-free, nightshade-free one pot dinner! The perfect Autoimmune Protocol main course.
Add tallow to a large soup pot over medium heat. When hot, add lamb, onion, root vegetables, and salt. Cook for 10 minutes, stirring occasionally, until everything is golden brown.
Stir in the garlic and dry seasonings. Cook for 1 minute. Stir in broth, pumpkin, vinegar, and bay leaf.
Increase heat to bring to a low boil, reduce heat to keep at a very low simmer. Cover and cook for 1 hour or until lamb is very tender.
Remove bay leaf, then taste to adjust seasoning if necessary. Serve in bowls topped with optional fresh herbs and enjoy!
