This Paleo AIP Lamb and Root Veggie Stew is a gluten-free, nightshade-free one pot dinner! The perfect, comforting Autoimmune Protocol main course.

It’s rich in nourishing protein from lamb and bone broth and filling Autoimmune Protocol complaint tubers like parsnips and carrots. Thanks to the secret ingredient (pumpkin puree) it’s also free of tomatoes!

Hearty and full of chunky vegetables, this stew is rich with flavor, full of good fat and antioxidants, and most importantly – delicious! Perfect for a cold winter night when you want something comforting but without refined carbs.

Grab your favorite big bowl, then ladle in a few scoops of this hot and delectable stew. I like to put an oven mitt underneath the hot bowl, get cozy on the couch under a blanket, and enjoy this with my loved ones, and I just know you will too!

A One-Pot Meal

For me, keeping the AIP simple is all about cutting back on time in the kitchen. Whether that means chopping veggies on less days of the week, batch cooking my meats on a Sunday, or putting appliances to work like a slow cooker or the Instant Pot – I am all about it.

One of my favorite ways to save time is by creating less dishes. One pot meals are definitely up to par when it comes to decreasing the stack in the sink!

This Paleo AIP Lamb and Root Veggie Stew recipe requires a cutting board, a knife, and a soup pot. That’s it! Well, as delicious as it is you might be inclined to eat it straight out of the pot, but I suggest a few serving bowls and spoons as well! 😉
