Preheat oven to 350 degrees. Lightly grease an 8x8 baking dish or a loaf pan with coconut oil.

Peel and chop plantains into coin sized pieces. Place in a high powered blender or food processor. Process until mostly smooth.

Add in melted coconut oil and salt. Blend. Add filtered water as needed and scrape down sides until it blends smooth. Depending on your plantains you may need more or less filtered water.

Once you have a smooth, thick paste like consistency, scoop it into the baking dish and spread evenly with a spatula.

Bake in the oven until the bread is lightly golden brown (25-30 minutes). Cool for 15 minutes before slicing into squares
