Paleo AIP No-Tomato Sauce (Nightshade-Free)

This Paleo AIP No-Tomato Sauce has zero tomatoes. Perfect for nightshade-free Autoimmune Protocol pasta & pizza!

Ingredients

  • 1 Tbsp of olive oil or avocado oil
  • 1 large white onion, diced
  • 3 cloves garlic, minced
  • 3 stalks of celery, sliced
  • 3 carrots, peeled and chopped
  • 1 large beet, peeled and chopped
  • 1 tsp oregano
  • ½ tsp thyme
  • 2 tsp parsley
  • 1.5 tsp sea salt
  • 1 Tbsp non-fortified nutritional yeast (optional)
  • 1.5-2 cups bone broth or water (enough to cover veggies)
  • ½ Juice of a lemon
  • ¼ cup fresh basil, chopped

Instructions

  1. Heat oil in a pot over medium heat. Add the garlic and onions and sauté for 2-3 minutes.

  2. Add the celery, carrots and beet to the pot and cook for another 2-3 minutes.

  3. Add in the spices and the water or bone broth (enough to cover the veggies) and cook for 20-30 minutes or until the veggies are completely soft.

  4. Stir in the lemon juice, nutritional yeast (if using) and the basil.

  5. Allow to cool slightly and then transfer to a blender (or use an immersion blender or food processor) and pulse until you reach your desired texture.
