Heat oil in a pot over medium heat. Add the garlic and onions and sauté for 2-3 minutes.
Add the celery, carrots and beet to the pot and cook for another 2-3 minutes.
Add in the spices and the water or bone broth (enough to cover the veggies) and cook for 20-30 minutes or until the veggies are completely soft.
Stir in the lemon juice, nutritional yeast (if using) and the basil.
Allow to cool slightly and then transfer to a blender (or use an immersion blender or food processor) and pulse until you reach your desired texture.
