You’ll love to batch cook this Paleo AIP No-Tomato Sauce! It’s the perfect recipe to have extra made up on hand for when you need it.

Make a double batch, then get your food-safe storage containers ready. Leave ½” of space at the top of the containers so that when you freeze the sauce it doesn’t expand and crack your containers.

If using Mason jars, chill the sauce completely in the fridge before freezing, and be sure to save the room at the top of the jars. This will help to prevent the glass from cracking when they freeze.

Paleo AIP No-Tomato Sauce (Nightshade-Free)

Ingredients

  • 1 Tbsp of olive oil or avocado oil
  • 1 large white onion, diced
  • 3 cloves garlic, minced
  • 3 stalks of celery, sliced
  • 3 carrots, peeled and chopped
  • 1 large beet, peeled and chopped
  • 1 tsp oregano
  • ½ tsp thyme
  • 2 tsp parsley
  • 1.5 tsp sea salt
  • 1 Tbsp non-fortified nutritional yeast (optional)
  • 1.5-2 cups bone broth or water (enough to cover veggies)
  • ½ Juice of a lemon
  • ¼ cup fresh basil, chopped

Instructions

  • Heat oil in a pot over medium heat. Add the garlic and onions and sauté for 2-3 minutes.
  • Add the celery, carrots and beet to the pot and cook for another 2-3 minutes.
  • Add in the spices and the water or bone broth (enough to cover the veggies) and cook for 20-30 minutes or until the veggies are completely soft.
  • Stir in the lemon juice, nutritional yeast (if using) and the basil.
  • Allow to cool slightly and then transfer to a blender (or use an immersion blender or food processor) and pulse until you reach your desired texture.
