Granola Bites

I didn’t realize how much I missed sweet, crunchy, sticky granola until I came up with this recipe. I was looking to make a sweet treat that was convenient for snacking and travelling and granola bites were born!

I added in some collagen for an added boost of protein and some tiger nuts because they are not nuts but taste like nuts so your brain will think you are eating nuts so basically they are AMAZING! Anyways, you could totally make these without tiger nuts but they really add to the recipe so if you can get your hands on some I would recommend it. If you tolerate nuts then you could add pecans, almonds or walnuts instead.

Granola Bites

AIP granola rolled into bite sized balls.
Course Snacks
Prep Time 10 minutes
Total Time 30 minutes
Servings 20 bites

Ingredients

  • 2 cups dates
  • 1/2 cup unsweetened shredded coconut or flakes
  • 1/4 cup roughly chopped tiger nuts
  • 3 tbsp melted coconut butter (manna) Can sub coconut oil
  • 2 tbsp collagen hydrolysate I use Great Lakes-green can

Instructions

  1. Put the dates to the food processor and pulse/blend until the dates are a paste
  2. Add in the remaining ingredients and pulse until mixed together
  3. Roll into bite sized balls with your hands and place on a parchment lined baking sheet.
  4. Pop in the freezer for 20-30 minutes to make them less sticky and firm up a bit.
  5. Store in the freezer for up to 3 months or keep in the fridge for a week. If keeping in the freezer, remove 5 minutes before eating. Enjoy!
