Plantain Like Bread

Okay so notice that I called this recipe plantain like bread….rather than just plantain bread. I did this because, well it depends on your definition of bread. To me this is bread…but remember I have been on the autoimmune protocol for over two years and well white fluffy foamy bread is just one of those things that we can’t have.

So yes it has been awhile since I have had bread…but this still reminds me of bread. More specifically it reminds me of corn bread. It holds together really well, has less than five ingredients and is extremely easy to make.
 
So when you have a bread craving or you want something to soak up that delicious sauce you have left over on your plate…then this recipe is for you.

Plantain Like Bread (AIP, Paleo)

Course Side Dish
Prep Time 5 minutes
Cook Time 25 minutes
Total Time 55 minutes

Ingredients

  • 2 green plantains
  • 3 tbsp coconut oil melted plus more for greasing
  • 1/2 tsp salt
  • up to 1/4 cup filtered water

Instructions

  1. Preheat oven to 350 degrees. Lightly grease an 8×8 baking dish or a loaf pan with coconut oil.
  2. Peel and chop plantains into coin sized pieces. Place in a high powered blender or food processor. Process until mostly smooth.
  3. Add in melted coconut oil and salt. Blend. Add filtered water as needed and scrape down sides until it blends smooth. Depending on your plantains you may need more or less filtered water.
  4. Once you have a smooth, thick paste like consistency, scoop it into the baking dish and spread evenly with a spatula.
  5. Bake in the oven until the bread is lightly golden brown (25-30 minutes). Cool for 15 minutes before slicing into squares

      Hi there Louise,

      Excellent question! This bread keeps a week in the fridge. I haven’t tried freezing it, although I’m sure it would be fine…possibly for up to 4 weeks. 🙂
