Oven-Roasted Plantains

Life can be busy… so busy that basic things like cooking can fall by the way side. Many people assume that because you follow a healing diet such as the Autoimmune Protocol, then you must spend all of your time in the kitchen. There is some truth to that statement but I am always looking for ways to spend less time in the kitchen while still nourishing my body with healthy foods.

Plantains are probably my favorite starch, I love to eat them in so many different ways. In the last few months, I have been enjoying cooking them in the oven. By cooking them at a high temperature and in a high quality oil such as coconut or avocado oil, they crisp up and almost taste like a fritter.

I personally like to use a combination of coconut oil and avocado oil when baking mine. Make sure to stir them every 15 minutes or so or they will stick to the pan and not crisp up on all sides. You can also switch up the seasonings to change the flavor. Lately I have been using the Primal Palate Spices in breakfast blend, super gyro, and garlic & herb, all of which are AIP friendly.

I often serve this with oven roasted chicken breasts or thighs or with BBQ steak.

Oven-Roasted Plantains

A quick and easy weeknight side dish!

Prep Time 5 minutes
Cook Time 1 hour
Total Time 1 hour 5 minutes
Servings 4 servings

Ingredients

  • 4 large green plantains
  • 3 Tbsp coconut oil or avocado oil
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp dried oregano
  • 1/4 tsp dried thyme

Instructions

  1. Preheat the oven to 400 degrees.
  2. Peel and slice the plantains into half moons.
  3. Place the plantains into an 8×8 glass baking dish. Pour the oil on top of the plantains and stir to coat.
  4. Season with the spices and salt. Stir to coat.
  5. Bake for 60 minutes (stirring every 15 minutes) or until golden brown and crispy.
  6. Remove from the oven and let cool for 5 minutes before serving. Store in the fridge for up to 5 days.
